Ingredients for - Brine for Smoked Salmon

1. Water - 1 gallon
2. Kosher salt - 1 cup
3. White sugar - 1 cup
4. Brown sugar - 1 cup
5. Dry crab and shrimp seasoning mix - 1 (3 ounce) package
6. Lemon pepper to taste - 1 (3 ounce) package
7. Freshly ground black pepper to taste - 1 (3 ounce) package
8. Yellow onion, sliced - 1 large
9. Lemons, sliced and crushed - 4
10. Oranges, sliced and crushed - 2
11. Lime, sliced and crushed - 1
12. Garlic, crushed or to taste - 4 cloves
13. Hot pepper sauce - 1 dash

How to cook deliciously - Brine for Smoked Salmon

1. Stage

Pour water into a large bowl or small bucket. If using a pot, use one that does not contain aluminum. Stir in salt, white sugar, brown sugar, seasoning mix, lemon pepper, and black pepper. Add onion, lemons, oranges, lime, garlic, and hot pepper sauce.

Soak your salmon in this brine in the refrigerator for 12 to 36 hours.
