1. 4 large artichokes, trimmed -
2. 1 lemon, thinly sliced -
3. 2 c. panko bread crumbs -
4. 1 c. shredded mozzarella, plus more for sprinkling -
5. 1 c. freshly grated Parmesan -
6. 1/4 c. chopped fresh parsley -
7. 1/3 c. extra-virgin olive oil -
8. 2 cloves garlic, minced -
9. Kosher salt -
10. Freshly ground black pepper -
11. Warm marinara, for dipping -

How to cook deliciously - Cheesy Stuffed Artichokes

1. Stage

Preheat broiler. Trim artichokes. 

2. Stage

In a large pot, add about 1/2 inch of water and lemon slices. Add artichokes, then bring to a simmer and steam until tender, about 25 minutes. Remove and let cool until able to handle.

3. Stage

Meanwhile, prepare stuffing: In a large bowl, mix together Panko, mozzarella, Parmesan, parsley, olive oil, and garlic. Season with salt and pepper.

4. Stage

Pack bread crumb mixture into the artichoke leaves. Place artichokes in a baking dish, sprinkle with more mozzarella, and bake until cheese is melted and bread crumbs are golden, about 5 minutes. Serve with marinara.
