Ingredients for - Sweet & Sour Braised Red Cabbage

1. 3 tbsp. butter, divided -
2. 1/2 large yellow onion, chopped (about 1 cup) -
3. 2 lb. red cabbage (from 1 small or ½ a large head), cored and sliced ¼” thick -
4. 1 medium tart apple (optional) such as Granny Smith, peeled, cored, and cut into long matchsticks -
5. 1/2 c. dry red wine -
6. 1/2 c. water -
7. 3 tbsp. red wine vinegar  -
8. 3 tbsp. packed light or dark brown sugar -
9. 1 1/2 tsp. kosher salt -
10. 1/2 caraway seeds (optional) -
11. Freshly ground black pepper -
12. Fresh dill and/or chives, for serving -

How to cook deliciously - Sweet & Sour Braised Red Cabbage

1. Stage

In a large pot with a lid, melt 2 tablespoons butter over medium heat. Add onions and cook until they begin to brown at the edges, about 6 minutes.

2. Stage

Add cabbage, apple (if using), wine, water, vinegar, sugar, salt, caraway seeds (if using), and pepper. Stir to combine, and bring up to a boil. Reduce heat to a simmer and cover. Cook, stirring occasionally, until most of the liquid has evaporated and cabbage is crisp-tender, about 40 minutes. Taste and adjust the seasonings as necessary.

3. Stage

Remove from heat and stir in the remaining tablespoon of butter. Garnish with fresh herbs and serve.
