7. 3 tbsp. shredded Parmesan, plus more for serving -
8. 1/4 tsp. Freshly ground black pepper -
9. 1/4 tsp. cayenne pepper -
10. 1 c. dry white wine, such as Pinot Grigio or Sauvignon Blanc -
11. 5 cloves garlic, peeled -
12. 2 c. heavy cream -
13. 1/2 red onion, diced -
14. 1 plum tomato, diced -
15. 1 tsp. fresh basil, chopped, plus more for serving -
16. Kosher salt -

1. Stage

In a medium bowl, toss shrimp with baking soda and ¼ teaspoon salt. Refrigerate 20 minutes.
