1. 3 tbsp. mayonnaise
2. 2 tsp. lemon juice
3. 1 tbsp. finely chopped chives
4. Freshly ground black pepper
5. Kosher salt
6. 6 hard boiled eggs, peeled and chopped
7. 1 avocado, cubed
8. Lettuce, for serving
9. Cooked bacon, for serving

1 . Stage

In a medium bowl, whisk together mayonnaise, lemon juice, and chives. Season with salt and pepper.

Add eggs and avocado and toss gently to combine.
