1. 1 c. sliced cabbage or pre-sliced slaw mix -
2. 1/4 medium red onion, thinly sliced -
5. 1 tbsp. sweet pickle juice -
8. 1 (10-oz.) can chicken, drained and fluffed with a fork -
9. 1/4 c. celery, diced small -
10. 1/4 c. dried cranberries, roughly chopped -
11. 1 1/2 tbsp. Clover Valley® Shelled Walnuts, roughly chopped -
12. 2 tbsp. chopped sweet pickles -
13. 1 tbsp. sweet pickle juice -
15. 1/4 c. light mayonnaise -
16. 3 tbsp. nonfat Greek yogurt -
22. 6 slices whole grain bread -
How to cook deliciously - Cranberry-Walnut Chicken Salad Sandwiches
1. Stage
Make slaw: In a small bowl, stir to combine cabbage, onions, vinegar, oil, and sweet pickle juice. Season with salt and pepper to taste.
2. Stage
Make chicken salad: In a medium bowl, stir to combine chicken along with the remaining chicken salad ingredients. Season to taste with salt and pepper.
3. Stage
Divide chicken salad between 3 slices of bread, then top with slaw and remaining slices of bread.
