1. Italian bread crumbs - ½ cup
2. Freshly grated Parmesan cheese - ¼ cup
3. Italian seasoning - 1 teaspoon
4. Salt - 1 teaspoon
5. Dried basil - ½ teaspoon
6. Garlic powder - ½ teaspoon
7. Onion Powder - ½ teaspoon
8. Freshly ground black pepper - ½ teaspoon
9. Flour - ¼ cup
10. Eggs, beaten - 2 large
11. Eggplant, sliced into 1/2-inch rounds - 1 medium
12. Marinara sauce, or more to taste - 1 cup
13. Mozzarella cheese, or as needed - 8 slices

1. Stage

Combine bread crumbs, Parmesan cheese, Italian seasoning, salt, basil, garlic powder, onion powder, and black pepper in a shallow bowl. Place flour in a separate shallow bowl and beaten eggs in a third shallow bowl. Dotdash Meredith Food Studios

Dip sliced eggplant first in flour, then in beaten eggs, and finally coat with bread crumb mixture. Place coated eggplant on a tray and let rest for 5 minutes. Dotdash Meredith Food Studios

Preheat an air fryer to 370 degrees F (185 degrees C).
