How to cook deliciously - Crumpets
1. Stage
In a small heatproof bowl, combine milk and granulated sugar. Sprinkle yeast over and let stand until frothy, about 5 minutes.

Meanwhile, in the large bowl of a stand mixer fitted with the whisk attachment, combine flour, salt, and baking powder. Add water and milk mixture and beat on low speed just until combined, then increase speed to high and beat until batter is smooth and stretchy, 3 to 4 minutes.

Remove bowl from stand mixer. Cover bowl with a clean kitchen towel and let sit in a warm place until risen and bubbling, about 1 hour.

Preheat a large, heavy skillet over medium heat (a small dollop of butter should sizzle when it hits the pan, but not smoke). Pour in 1 teaspoon oil and tilt pan to distribute. Grease 4 (3.5") metal rings with butter and carefully place in pan.

Pour 1/4 cup batter into each metal ring. Cook until bubbles have risen to the surface and crumpets appear set and dry matte on the top, 4 to 5 minutes.

Using tongs, lift metal rings from crumpets. Using a large flat spatula or fish spatula, carefully flip crumpets and continue to cook until light golden on the bottom, 30 seconds to 1 minute more. Transfer to a wire rack. Repeat 3 more times with remaining batter and oil.

Serve crumpets warm with plenty of butter alongside. Top with desired toppings (if using).
