1. 1 c. dried flageolets -
2. 1 1/2 c. chicken stock -
3. 1 1/2 c. water -
4. 1 small onion -
5. 2 clove garlic -
6. 1 sprig thyme -
7. Coarse salt and freshly ground pepper -

How to cook deliciously - Flageolets

1. Stage

In a medium saucepan, bring the drained flageolets, stock, water, onion, garlic, and thyme to a boil over high heat. Reduce the heat to low and simmer for 20 minutes. Add the salt and pepper and continue cooking until the flageolets are tender, another 20 to 30 minutes. Off the heat, allow the flageolets to cool in their cooking liquid. Refrigerate and reheat the flageolets in the cooking liquid, if necessary.
