1. 1 pound garlic summer sausage, casing removed and quartered lengthwise -
2. 2 small zucchini, cut in half lengthwise -
3. 2 yellow summer squash, cut in half lengthwise -
4. 1 medium sweet red pepper, halved and seeded -
5. 1 medium sweet orange pepper, halved and seeded -
6. 2 tablespoons olive oil -
7. 1/2 teaspoon salt -
8. 1/4 teaspoon pepper -
9. 1 package (5 ounces) spring mix salad greens -
10. 1/2 English cucumber, chopped -
11. 2 celery ribs with leaves, chopped -
12. 1/2 cup Italian salad dressing -

How to cook deliciously - Grilled Summer Sausage Salad

1. Stage

Brush summer sausage, zucchini, yellow squash and peppers with olive oil; sprinkle with salt and pepper. Grill sausage and vegetables on an oiled rack, covered, over medium heat for 5-6 minutes on each side or until crisp-tender. Remove to cutting board; coarsely chop vegetables and sausage.

2. Stage

Place salad greens in a large bowl; add cucumber, celery, grilled vegetables and sausage. Drizzle with dressing; toss to coat. Divide among 8 bowls. If desired, sprinkle with additional black pepper.
