1. 1 cup sugar -
2. 1/3 cup biscuit/baking mix -
3. 1 teaspoon grated lemon zest -
4. 4 cups fresh pineapple chunks -

6. 3/4 cup biscuit/baking mix -
7. 2/3 cup sugar -
8. 1 large egg, beaten -
9. 1/4 cup butter, melted -
10. Vanilla ice cream, optional -

How to cook deliciously - Pineapple Cobbler

1. Stage

Combine the sugar, biscuit mix and lemon zest in a large bowl. Stir in the pineapple. Pour the filling into a greased 9-inch square baking dish. Editor's Tip: Coating the pineapple evenly with the dry mixture will ensure the dish has the same consistency throughout.

2. Stage

In a smaller bowl, combine the biscuit mix, sugar and beaten egg until well mixed. Sprinkle over the top of the pineapple filling. Drizzle with melted butter.

3. Stage

Bake at 350°F for 40 to 45 minutes or until the topping has browned. Serve warm or cold, and with ice cream if desired.
