Ingredients for - Pinto Bean Pie

1. Dough for single-crust pie -
2. 1/2 cup canned pinto beans, rinsed, drained and mashed -
3. 1/3 cup butter, melted -
4. 1 teaspoon vanilla extract -
5. 1-1/4 cups sugar -
6. 1/2 cup sweetened shredded coconut, finely chopped -
7. 2 eggs, lightly beaten -
8. 1/2 cup chopped pecans -
9. Whipped cream, optional -

How to cook deliciously - Pinto Bean Pie

1. Stage

Preheat oven to 350°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge.

2. Stage

In a large bowl, combine beans, butter and vanilla. Stir in the sugar and coconut. Add eggs; stir well. Pour into crust. Bake for 30 minutes.

3. Stage

Sprinkle with pecans; bake until a knife inserted in the center comes out clean but moist, 15-20 minutes. Cool on a wire rack. If desired, serve with whipped cream. Refrigerate leftovers.
