How to cook deliciously - Sirloin Tip Roast

1. Stage

Place a large piece of heavy-duty foil (21x17 inches) in a shallow roasting pan. Place the roast on the foil. Pour 1 cup of water over the roast. Scatter the drained mushroom stems and pieces over the top of the roast and sprinkle it with the soup mix. Wrap the foil securely around the roast, sealing it tightly.

Bake the roast at 350°F for 2 hours and 30 minutes to 3 hours or until the roast reaches the desired doneness. For medium-rare doneness, the roast's internal temperature should reach 135°; for medium, 140°; and for medium-well, 145°.

Remove the roast to a serving platter and keep it warm. Pour the drippings and mushrooms into a saucepan. Combine the cornstarch and the remaining water until smooth, then gradually stir it into the drippings. Bring the mixture to a boil. Cook and stir for two minutes or until thickened. Serve the gravy with the sliced beef. Editor's Tip: You can keep the roast warm by loosely covering it with foil.
