1. 1 tbsp. extra-virgin olive oil -
2. 1 lb. ground spicy turkey sausage -
3. 1 large yellow onion, finely chopped -
4. 1 red bell pepper, seeds and ribs removed, finely chopped -
5. 2 cloves garlic, finely chopped -
6. 1 tbsp. chili powder -
7. 1 tsp. cayenne pepper -
8. 1 tsp. dried oregano -
9. Kosher salt -
10. 2 tbsp. tomato paste -
11. 3 c. low-sodium chicken broth -
12. 1 (15-oz.) can cannellini beans, rinsed, drained -
13. 1 (15-oz.) can diced tomatoes -
14. 1 large bunch Tuscan kale, stems and large center ribs removed, leaves torn into pieces -
15. Sour cream for topping (optional)  -

How to cook deliciously - Spicy Turkey Sausage & Kale Chili

1. Stage

In a large pot or Dutch oven over medium heat, heat oil. Add sausage and cook, stirring occasionally, until browned and cooked through, about 6 minutes. Add onion, bell pepper, garlic, chili powder, cayenne, and oregano; season with salt. Cook, stirring, until tender, 6 to 7 minutes. Add tomato paste and cook, stirring, until slightly darkened, about 1 minute.

2. Stage

Add broth, beans, and diced tomatoes and bring to a boil. Reduce heat to medium-low, bring to a simmer, and add kale; season with salt. Simmer, stirring occasionally, until chili is thickened, about 30 minutes.
