Ingredients for - Tortellini Skewers

1. Kosher salt
2. 9 oz. fresh cheese tortellini
3. 8 oz. mozzarella balls, halved
4. 2 tbsp. extra-virgin olive oil
5. 1 tbsp. red wine vinegar
6. 1/4 tsp. dried oregano
7. Large pinch red pepper flakes
8. 4 oz. thinly sliced salami rounds, halved if large
9. 1 c. pesto sauce pesto sauce, for dipping

How to cook deliciously - Tortellini Skewers

1 . Stage

In a large pot of salted boiling water, cook tortellini according to package directions. Drain, transfer to a large bowl, and let cool.  Add mozzarella and toss with olive oil, vinegar, oregano, and pepper flakes. 

2 . Stage

Fold salami in quarters. Skewer one piece of mozzarella, a piece of salami, and 4 tortellini on each skewer. Serve with the pesto.
