Ingredients for - Versatile Scones

1. 3 c. all-purpose flour  -
2. 1 tbsp. granulated sugar -
3. 1 tbsp. baking powder -
4. 1 tsp. kosher salt  -
5. 1/2 c. (1 stick) cold butter, cut into cubes -
6. Desired mix-ins -
7. 3/4 c. buttermilk, plus more as needed -
8. 2 large eggs -
9. 1/2 c. freshly grated Parmesan -
10. 1/2 c. freshly grated Pecorino -
11. 1 tsp. Freshly ground black pepper -
12. 1 c. shredded mozzarella  -
13. 2 tbsp. Thinly sliced basil -
14. 1 c. shredded cheddar -
15. 1/2 c. chopped cooked bacon -
16. 2 tbsp. sliced green onions or chives  -
17. 1 c. crumbled goat cheese -
18. 2 tbsp. freshly chopped rosemary -

How to cook deliciously - Versatile Scones

1. Stage

Line a large baking sheet with parchment. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add butter and use your hands to cut into flour until the size of peas. Add mix-ins and toss to coat in flour. 

2. Stage

In a small bowl or glass measuring cup, whisk together buttermilk and eggs. Add to dry ingredients and use a rubber spatula to mix until a dough starts to form. Add more buttermilk, 1 tablespoon at a time, as needed to help dough form. 

3. Stage

Dump dough onto counter and gently pat into an 8” circle. Use a knife or bench scraper to cut into 8 triangles. Place on prepared baking sheet and freeze for 30 minutes. 

4. Stage

Preheat oven to 400°. Bake scones until golden, 20 minutes.
