1. 2 tbsp. unsalted butter -
2. 1 lb. yellow onions (about 3 small), ends trimmed, peeled, thinly sliced -
3. 1 tsp. finely chopped fresh thyme, plus whole leaves for serving -
4. 1 tsp. sherry or cider vinegar -
5. Kosher salt -
6. 2 tsp. fig jam -
7. 12 oz. plain creamy goat cheese -
8. Extra-virgin olive oil, for drizzling -
9. Freshly ground black pepper -
10. Toasted baguette slices, for serving -

How to cook deliciously - Baked Goat Cheese With Caramelized Onions

1. Stage

Uncover and add chopped thyme. Continue to cook over medium-low heat, stirring and scraping bottom of pan occasionally, until onions are browned and caramelized, about 25 minutes. Add vinegar, season with salt, and cook, scraping browned bits from bottom of pan, until combined, about 1 minute, Remove from heat. Add jam and stir to combine.

Slice goat cheese logs into 1/2" rounds. (For clean slices, run your knife through hot water and dry between slices.)

Line the bottom of a small, heatproof saucepan or baking dish with one-third of onions. Layer half of goat cheese slices on top, generously season with salt and pepper, then cover with another one-third of onions. Cover with remaining goat cheese, then remaining onions. Drizzle oil over top; generously season with salt and pepper.

Bake until cheese is warmed through and just beginning to brown at the edges, 25 to 30 minutes.

Top with thyme leaves. Serve with baguette alongside.
