1. Baby spinach and arugula - 1 (5 ounce) package
2. Blood oranges, peeled and sliced - 2
3. Blueberries - ⅔ cup
4. Whole walnuts - ⅔ cup
5. Crumbled feta cheese - ⅔ cup
6. Olive oil - ¼ cup
7. Lemon, zested and juiced - 1
8. Minced shallot - 1 tablespoon
9. Dijon mustard - ½ teaspoon
10. Freshly ground pepper to taste - ½ teaspoon

How to cook deliciously - Blood Orange, Blueberry, and Feta Salad

1. Stage

Divide spinach and arugula greens evenly among 4 plates. Top with blood orange slices, blueberries, walnuts. Set the feta in the middle of the salad.

Whisk olive oil, lemon zest and juice, shallot, Dijon mustard, and pepper together in a ball. Drizzle over the salads.
