Ingredients for - Cheesy BBQ Meatloaf Cups
3. 1 yellow onion, grated -
4. 2 garlic cloves, peeled, grated -
5. 1 red bell pepper, seeded and grated -
6. 1/4 c. plus 2 tbsps. fresh parsley, roughly chopped, divided -
7. 1 c. rolled oats -
9. 6 oz. Velveeta, cut into 12- ½” cubes -
10. 1 c. favorite store-bought BBQ sauce, divided -
How to cook deliciously - Cheesy BBQ Meatloaf Cups
1. Stage
Preheat oven to 400° F and spray a 12-cup cupcake pan with non-stick spray.
2. Stage
In a large bowl, add turkey, onion, garlic, bell pepper, ¼ cup parsley, oats, and egg and stir until combined.
3. Stage
Divide about ¼ cup meatloaf mix evenly between 12 muffin cups. Press 1 cube of Velveeta into the center of each meatloaf muffin so it is fully submerged.
4. Stage
Divide ½ cup of BBQ sauce between all 12 meatloaf muffins to cover the top. Bake for 25 minutes until golden and cooked through.
5. Stage
Remove from oven, let cool 5 minutes before removing meatloafs from pan. Serve with remaining BBQ sauce and parsley.
