How to cook deliciously - Lemon Olive Oil Cake

1. Stage

Preheat the oven to 350°F. Line a greased 8-inch round baking pan with parchment. In a large bowl, beat the eggs on high speed for three minutes. Gradually add the sugar, beating until the mixture has thickened. Then, gradually beat in the olive oil. Once combined, beat in the milk, lemon zest and lemon juice. Editor's Tip: Zest your lemon properly to ensure the cake doesn't get any of the bitter pith.

In another bowl, whisk together the flour, baking powder and salt. Fold the dry ingredients into the egg mixture.

Transfer the batter to the prepared cake pan, spreading it evenly. Bake the cake for 30 to 35 minutes, until a toothpick inserted in the center comes out clean. Cool the cake in the pan for 15 minutes before transferring it to a wire rack. Remove the parchment and let the cake cool completely. Dust the cake with confectioners' sugar before serving, if desired.
