Ingredients for - Coco Loco Shrimp
2. 1 lb. medium shrimp, peeled and deveined -
4. 1 c. unsweetened coconut flakes (chopped if large) -
8. Extra-virgin olive oil, for pan -
9. Favorite dipping sauce, for serving -
How to cook deliciously - Coco Loco Shrimp
1. Stage
Preheat oven to 425°. In a resealable Ziploc bag, add flour and shrimp. Shake until shrimp is fully coated.
2. Stage
In a small bowl, whisk eggs. In a shallow baking dish, combine coconut and panko and season with salt and pepper. Dip shrimp in egg, then add to baking dish and dredge in coconut-panko mixture. Transfer to an oiled baking sheet and bake for 10 minutes, flipping halfway through, until shrimp are golden and cooked through. Serve with your favorite dipping sauce.
