2. Packed, shredded pumpkin 1 ½ cups
3. Soy milk 1 cup
4. Frozen corn 1 cup
5. Eggs, beaten 2
6. Chopped onion ¼ cup
7. Rice flour 1 cup
8. Baking powder 1 teaspoon
9. Ground cinnamon 1 teaspoon

1 . Stage

Heat a large skillet over medium heat; prepare with cooking spray.

Stir pumpkin, soy milk, corn, eggs, and onion together in a bowl; add rice flour, baking, powder, and cinnamon and stir until well blended.
