1. 2 tbsp. extra-virgin olive oil
2. 1 lb. boneless skinless chicken breasts
3. 1 large onion, diced
4. 2 cloves garlic, minced
5. 1 lb. cremini mushrooms, sliced
6. 2 large carrots, peeled and sliced into coins
7. 2 stalks celery, sliced
8. Kosher salt
9. Freshly ground black pepper
10. 2 1/2 c. low-sodium chicken broth
11. 3/4 c. heavy cream

How to cook deliciously - Creamy Chicken and Mushroom Soup

1 . Stage

In a large stockpot over medium-high heat, heat 1 tablespoon oil. Add chicken and cook until golden, 4 minutes per side, then transfer to a cutting board and cut into small pieces.

2 . Stage

Reduce heat to medium and add remaining tablespoon oil, onion, garlic, mushrooms, carrots, and celery. Season with salt and pepper. Cook, stirring occasionally, until tender and golden, 8 to 10 minutes.

3 . Stage

Add broth and bring to a simmer.

4 . Stage

Stir in heavy cream and chicken and continue cooking until thickened, 15 minutes.
