1. Stage
In a large stockpot over medium-high heat, heat 1 tablespoon oil. Add chicken and cook until golden, 4 minutes per side, then transfer to a cutting board and cut into small pieces.

Reduce heat to medium and add remaining tablespoon oil, onion, garlic, mushrooms, carrots, and celery. Season with salt and pepper. Cook, stirring occasionally, until tender and golden, 8 to 10 minutes.

Add broth and bring to a simmer.
