1. 3 tbsp. extra-virgin olive oil
2. 2 leeks, cleaned and white and light green parts thinly sliced
3. 5 cloves garlic, minced
4. 1 russet potato, peeled and chopped
5. 1 large head cauliflower, cut into florets
6. Kosher salt
7. Freshly ground black pepper
8. 2 c. low-sodium chicken broth
9. Chopped chives, for garnish
10. Crumbled bacon, for garnish

How to cook deliciously - Cauliflower Leek Soup

1 . Stage

In a large pot over medium heat, heat olive oil. Add leeks and cook until golden, 4 minutes. Add garlic and cook until fragrant, 1 minute more.

2 . Stage

Season with salt and pepper to taste, then ladle into bowls and garnish with chives and bacon before serving.
