1. 1 small globe eggplant (about 1 lb.) -
2. 1 tsp. kosher salt -
3. 1/4 c. neutral oil -
4. 1/4 c. reduced-sodium soy sauce -
5. 2 tsp. pure maple syrup -
6. 1 tsp. smoked paprika -
7. 1/2 tsp. Liquid Smoke -
8. Freshly ground black pepper -

How to cook deliciously - Eggplant Bacon

1. Stage

Peel eggplant and cut off top near stem. Cut eggplant in half lengthwise, then cut each half again lengthwise to yield 4 long quarters. Using a mandoline or sharp knife, slice each quarter lengthwise into long, 1/4"-thick strips. Arrange eggplant in a single layer on 2 baking sheets; season with salt. Let sit 15 minutes.

Meanwhile, place racks in upper and lower thirds of oven; preheat to 275°. In a small bowl, whisk neutral oil, soy sauce, maple syrup, paprika, and liquid smoke.

Using paper towels, pat eggplant dry on both sides. Brush both sides with half of seasoned oil.

Bake 30 minutes. Flip slices, then brush tops with remaining seasoned oil; season with black pepper.

Rotate trays from top to bottom and continue to bake eggplant until darkened and beginning to crisp, 20 to 25 minutes more.

Transfer eggplant bacon to a wire rack and let cool.
