1. Diced tomatoes and green chilies, drained - 3 (10 ounce) cans
2. Cucumbers - peeled, seeded and chopped - 3
3. Roma (plum) tomatoes, chopped (or more to taste) - 2
4. Fresh cilantro, chopped - 1 bunch
5. Chopped onion, or to taste - ¼ cup
6. Jalapeno pepper, seeded and minced, or to taste - 1
7. Kosher salt to taste - 1

1. Stage

Mix together diced tomatoes and green chiles, cucumbers, roma tomatoes, cilantro, onion, jalapeno pepper and kosher salt in a bowl. Serve immediately; for best flavor, chill for at least one hour.
