2. Yellow onion, finely chopped - 1 small
3. Garlic, minced - 4 large cloves
4. Ground chicken - 1 pound
5. Diced tomatoes - 1 (15 ounce) can
6. Kidney beans, drained - 1 (15 ounce) can
7. Pinto beans, drained - 1 (15 ounce) can
8. Chipotle chile powder - 1 tablespoon
9. Brown sugar - 2 teaspoons
10. Ground cayenne pepper - 1 teaspoon
11. Red pepper flakes - ½ teaspoon
12. Kosher salt to taste - ½ teaspoon
13. Fresh cilantro, stems removed and leaves chopped - 1 bunch

1. Stage

Heat oil in a large pot over medium-high heat. Add onion and garlic; cook until soft and fragrant, about 5 minutes.

Increase heat to high and add ground chicken. Cook and stir chicken, breaking it up into small pieces, until no longer pink, 5 to 10 minutes.
