Ingredients for - Caprese-Stuffed Mushrooms

1. (2-pack) portobello mushroom caps - 2 (6 ounce) packages
2. Extra-virgin olive oil - 2 tablespoons
3. Shredded mozzarella cheese - 2 cups
4. Cherry or grape tomatoes, halved - 1 pint
5. Garlic, minced - 2 cloves
6. Thinly sliced fresh basil - 2 tablespoons
7. Kosher salt to taste - 2 tablespoons
8. Balsamic glaze, or to taste - 1 tablespoon

How to cook deliciously - Caprese-Stuffed Mushrooms

1. Stage

Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

2. Stage

Remove gills from each mushroom cap and place on the prepared baking sheet. Brush insides with olive oil. Fill with mozzarella cheese and top with tomatoes. Scatter garlic and basil over top and season with salt.

3. Stage

Bake in the preheated oven until mushrooms are tender and cheese is melted, about 25 minutes.

Drizzle with balsamic glaze and serve.
