1. 8 medium potatoes, peeled and cut into 1/4-inch pieces (about 8 cups) -
2. 3 tablespoons applewood seasoning rub -
3. 1/2 cup canola oil -
4. 1 small onion, finely chopped -
5. 1 small green pepper, finely chopped -
6. 2 cups Miracle Whip -
7. 4 hard-boiled large eggs, chopped -
8. 1 teaspoon salt -
9. 1/2 teaspoon pepper -

How to cook deliciously - Fried Potato Salad

1. Stage

Sprinkle potatoes with applewood seasoning. In a large skillet, heat oil over medium heat. Add potatoes in batches; cook, stirring frequently, until potatoes are tender, 15-20 minutes. Cool completely. Transfer to a large bowl.

Add remaining ingredients; gently toss to coat. Refrigerate until serving.
