1. 1 10-oz. box couscous -
2. 1/4 c. whole-grain Dijon mustard -
3. 1/4 c. apricot jam -
4. 5 tbsp. extra-virgin olive oil, divided -
5. 2 tbsp. Freshly Chopped Basil -
6. 2 tbsp. freshly chopped mint -
7. Kosher salt -
8. Freshly ground black pepper -
9. 4 sausages (chicken, pork, or lamb) -
10. Juice of 1 lemon -
11. 6 c. mixed greens -

How to cook deliciously - Grilled Sausages with Dijon-Apricot Mustard and Herbed Couscous and Salad

1. Stage

Bring 2 cups of water to boil. Add couscous, remove from heat and cover. Let sit for 5 minutes and fluff with fork. Spoon couscous into bowl to let cool slightly.

In small bowl, whisk together Dijon mustard and apricot jam, then set aside.

3. Stage

Heat lightly oiled grill pan over high heat, and grill sausages for 8 to 10 minutes, rotating sides every 2 minutes, until internal temperature reaches 155°.

4. Stage

In large bowl, whisk together lemon juice and remaining olive oil; season with salt and pepper. Gently toss with mixed greens until lightly coated.

5. Stage

Serve sausages with couscous, salad, and Dijon-apricot mustard.
