1. Olive oil - 3 tablespoons
2. Balsamic Vinegar - 2 tablespoons
3. Lemon juice - 1 tablespoon
4. Greek seasoning - 1 tablespoon
5. Kosher salt - 2 teaspoons
6. Freshly ground black pepper - ½ teaspoon
7. Garlic powder - ½ teaspoon
8. Dried oregano - ½ teaspoon
9. Ground thyme - ½ teaspoon
10. Russet potatoes, peeled and diced into 1-inch cubes - 4 large
11. Crumbled feta cheese - 3 ounces

How to cook deliciously - Feta Roasted Potatoes

1. Stage

Preheat the oven to 375 degrees F (190 degrees C).

2. Stage

Combine olive oil, balsamic vinegar, lemon juice, Greek seasoning, salt, pepper, garlic powder, oregano, and thyme in a large plastic bag or bowl. Add potatoes and shake until potatoes are coated.

Place into a baking dish that's large enough to accommodate potatoes in a single, snug layer.

Bake in the preheated oven for 40 minutes, stirring every 10 minutes. Top with feta cheese. Return to the oven and bake for another 5 minutes. Serve.
