1. Chickpeas, drained 1 (14 ounce) can
2. Tomatoes, chopped 2 large
3. Green onions, sliced 3 medium
4. Fresh mint, chopped 12 leaves
5. Lemon, juiced 1 medium
6. Extra-virgin olive oil 2 tablespoons
7. Salt and freshly ground black pepper to taste 2 tablespoons
8. Halloumi cheese, sliced 7 ounces

1 . Stage

Stir chickpeas, tomatoes, green onions, mint, lemon juice, and olive oil in a salad bowl. Season with salt and pepper; set aside.
