2. Chopped red onion - ¼ cup
3. Fresh lime juice - 2 tablespoons
4. Grapefruit juice - 2 tablespoons
5. Rice wine vinegar - 2 tablespoons
6. Ground black pepper - ½ teaspoon
7. Sea salt - ½ teaspoon
8. Olive oil - ¼ cup
9. Honey - 1 tablespoon
10. Chopped cilantro - 3 tablespoons
11. Fresh mint, chopped - 1 leaf
12. Fresh basil, chopped - 1 leaf
13. Baby arugula leaves - 2 ½ cups
14. Kalamata olives, pitted and halved - 2 ounces
15. Cherry tomatoes, halved - 2 ounces
16. Freshly shaved Parmesan cheese, or to taste - 2 tablespoons

How to cook deliciously - Arugula Salad with Avocado Citrus Vinaigrette

1. Stage

Place the avocado, red onion, lime juice, grapefruit juice, rice wine vinegar, black pepper, and sea salt in a blender, and process until smooth, about 30 seconds. While the blender is running, drizzle in the olive oil; add honey, cilantro, mint, and basil leaves, and process for a few more seconds to leave the herbs visible as small flecks.

2. Stage

Toss the arugula, kalamata olives, and cherry tomatoes in a salad bowl; sprinkle with shaved Parmesan cheese. Pour vinaigrette over the salad, and toss to serve.
