How to cook deliciously - Apple and honey brioche on pumpkin dough
1. Stage
Dissolve yeast in warm milk, add flour, mix. Cover with a towel, leave for 1 hour.
2. Stage
Peel the pumpkin, cut it into pieces, and boil it with a little water (~50 ml). Mashed the pumpkin. I mashed it in a blender.
3. Stage
Add sugar, salt, soft butter, cooled pumpkin puree and egg to the risen stew. Stir to mix. Add flour in batches. Knead into a soft, non-sticky dough. Cover with a towel and leave to rise for 1.5 hours.
4. Stage
Peel the apples and cut into small pieces. Knead the dough well and roll it into a rectangle. It is not necessary to roll out thinly. Place apples on the dough.
5. Stage
Mix the sugar and cinnamon. Sprinkle this mixture over the apples.
6. Stage
Roll first into a roll and then into a snail. Place in a parchment-lined and oiled cake tin, I have a 28 cm diameter cake tin. Cover with a towel and leave to rise for 1 hour.
7. Stage
Mix the honey and melted butter together. Spread half of the honey mixture on the browned brioche. Bake in a preheated 180 degrees oven for 45 minutes. Check the readiness with a toothpick, piercing in different places.
8. Stage
Brush the finished hot brioche with the remaining honey mixture, first on top, then on the sides. Let the brioche cool and you can slice it. Enjoy your tea!
