1. Grated Parmigiano-Reggiano cheese - ⅓ cup
2. Extra-virgin olive oil - ¼ cup
3. Fresh basil leaves, stems removed - 1 ½ ounces
4. Pine nuts - 3 tablespoons
5. Garlic, minced - 1 clove
6. Cherry tomatoes, seeded and diced - 2 cups
7. Ricotta cheese - ½ cup
8. Salt and ground black pepper to taste - ½ cup

1. Stage

Combine Parmigiano-Reggiano cheese, olive oil, basil leaves, pine nuts, and garlic in a mortar. Crush with a pestle until pesto is finely ground, but not too smooth.
