Ingredients for - Goan Chicken Masala Curry

1. Red chile peppers - 6
2. Cumin seeds - 1 tablespoon
3. Coriander seeds - 1 teaspoon
4. Cinnamon stick - 1 (1 inch) piece
5. Fresh ginger, peeled - 1 (1 inch) piece
6. Garlic, minced - 5 cloves
7. 4 peppercorns - 5 cloves
8. 4 whole cloves - 5 cloves
9. Oil - 2 tablespoons
10. Onion, finely chopped - 1 large
11. Whole chicken, cut into 6 pieces - 1 (2 to 3 pound)
12. Water as needed - 1 (2 to 3 pound)
13. Tamarind juice, or more to taste - 2 tablespoons
14. Salt to taste - 2 tablespoons
15. Fresh cilantro leaves, or to taste - 2 teaspoons

How to cook deliciously - Goan Chicken Masala Curry

1. Stage

Combine red chile peppers, cumin seeds, coriander seeds, cinnamon stick, ginger, garlic, peppercorns, and cloves in a mortar and pestle or a food processor; grind or process into a paste (masala paste).

2. Stage

Heat oil in a large pot. Add onion and until golden brown. Stir in masala paste and cook for 2 minutes. Add pieces of chicken; mix well and pour in enough cold water to cover the chicken. Bring to a boil.

3. Stage

Cover and simmer until chicken is cooked through, about 30 minutes. Season to taste with tamarind juice and salt. Stir well and cook for additional 5 minutes. Garnish with fresh cilantro.
