Ingredients for - Peperonata

1. Olive oil - 3 tablespoons
2. Onions, chopped - 2
3. Garlic, minced - 3 cloves
4. Potatoes, chopped - 4
5. Tomatoes, chopped - 5
6. Red bell peppers, cored and sliced - 3
7. Yellow bell peppers, cored and sliced - 3
8. Water, or more as needed - 1 cup
9. Tomato paste (Optional) - ½ cup
10. Capers - ⅓ cup
11. Chopped fresh basil - ¼ cup
12. Freshly ground black pepper - ¼ cup

How to cook deliciously - Peperonata

1. Stage

Heat olive oil in a large pot. Add onions and garlic; cook and stir until soft and lightly browned, about 5 minutes.

2. Stage

Stir potatoes, tomatoes, red bell peppers, yellow bell peppers, water, tomato paste, capers, and basil into the pot. Cook until potatoes and peppers are soft, adding more water if needed, about 45 minutes. Season with pepper.
