Ingredients for - Lentil and Bulgur Salad

1. 3/4 c. lentils -
2. 1 box fine-grain bulgur wheat (scant 3/4 cup) -
3. Coarse salt -
4. Ground pepper -
5. 1 pt. cherry or grape tomatoes -
6. 3/4 c. thinly sliced scallions -
7. 1/4 c. fresh lemon juice -
8. 2 tbsp. olive oil -
9. c. crumbled feta cheese -

How to cook deliciously - Lentil and Bulgur Salad

1. Stage

In a medium saucepan, cover lentils with water by 1 inch. Bring to a boil; reduce to a simmer. Cover, and cook until lentils are tender but still holding their shape, 15 to 20 minutes. Drain well.

2. Stage

Meanwhile, bring 1 cup water to a boil in a small saucepan. Stir in bulgur, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover; remove from heat, and let stand until bulgur has absorbed liquid, 30 minutes.

3. Stage

Transfer bulgur to a large bowl. Gently stir in lentils, tomatoes, scallions, lemon juice, and oil. Serve sprinkled with feta.
