1. 1/2 cup sugar -
2. 1/3 cup vegetable oil -
3. 1/3 cup orange juice concentrate -
4. 3 egg whites -
5. 1 cup all-purpose flour -
6. 1 teaspoon baking powder -
7. 1 teaspoon ground cinnamon -
8. 1/2 teaspoon ground allspice -
9. 1/4 teaspoon baking soda -
10. 1/8 teaspoon salt -
11. 1 cup grated carrots -
12. 2 teaspoons confectioners' sugar -

How to cook deliciously - Light Carrot Cake

1. Stage

In a large bowl, combine the first four ingredients; beat for 30 seconds. Combine flour, baking powder, cinnamon, allspice, baking soda and salt; add to the orange juice mixture and mix well. Stir in carrots.

2. Stage

Pour into an 8-in. square baking pan that has been coated with cooking spray. Bake at 350° for 30 minutes or until a toothpick inserted in the center comes out clean. Cool; dust with confectioners' sugar.
