Add cheddar and whisk until combined and creamy. Season with salt and pepper. Keep sauce on low heat while you prep the rest of the burger.

In a large skillet over medium-high heat, heat oil. Add burger patties and season with salt and pepper. Cook 4 minutes per side for medium rare. Set aside.
