1. Rice noodles - 1 (12 ounce) package
2. Butter - 2 tablespoons
3. Boneless, skinless chicken breast halves, cut into bite-sized pieces - 1 pound
4. Vegetable oil - ¼ cup
5. Eggs - 4
6. White sugar - 3 tablespoons
7. Fish sauce - 2 tablespoons
8. White wine vinegar - 1 tablespoon
9. Crushed red pepper - ⅛ tablespoon
10. Bean sprouts - 2 cups
11. Green onions, chopped - 3
12. Crushed peanuts - ¼ cup
13. Lemon, cut into wedges - 1

1. Stage

Soak rice noodles in cold water until soft, 30 to 50 minutes. Drain and set aside.
