Ingredients for - Pork Stew

1. 2 pork tenderloins (1 pound each), cut into 2-inch pieces -
2. 1 teaspoon salt -
3. 1/2 teaspoon pepper -
4. 2 large carrots, cut into 1/2-inch slices -
5. 2 celery ribs, coarsely chopped -
6. 1 medium onion, coarsely chopped -
7. 3 cups beef broth -
8. 2 tablespoons tomato paste -
9. 1/3 cup pitted dried plums (prunes), chopped -
10. 4 garlic cloves, minced -
11. 2 bay leaves -
12. 1 fresh rosemary sprig -
13. 1 fresh thyme sprig -
14. 1/3 cup Greek olives, optional -
15. Chopped fresh parsley, optional -
16. Hot cooked mashed potatoes, optional -

How to cook deliciously - Pork Stew

1. Stage

Sprinkle the pork with salt and pepper, then transfer it to a 4-quart slow cooker. Next, add the carrots, celery and onion to the slow cooker.

2. Stage

While that’s cooking, whisk together the beef broth and tomato paste in a small bowl, then add the mixture to the slow cooker with the meat and vegetables. Finally, add the prunes, garlic, bay leaves, rosemary, thyme and olives (if you're using them). Editor’s Tip: Tie the herbs into a bundle before adding them to the slow cooker to make removing them from the stew easier.

3. Stage

Reduce the slow cooker heat to low, then cover and cook the stew until the meat and vegetables are tender, five to six hours.

4. Stage

Remove and discard the bay leaves, rosemary and thyme. Before serving, sprinkle the stew with fresh parsley.
