Ingredients for - Black Bean And Corn Salad

1. 1 (15-oz.) can black beans, rinsed and drained
2. 1 c. frozen corn, thawed
3. 1 avocado, diced
4. 1 jalapeño, seeds removed and finely chopped
5. 1/2 c. quartered cherry tomatoes
6. 1/4 medium red onion, diced
7. 1/4 c. freshly chopped cilantro
8. Juice of 1 lime
9. 2 tbsp. extra-virgin olive oil
10. 1/2 tbsp. honey
11. 1 clove garlic, minced
12. 1/2 tsp. ground cumin
13. Kosher salt
14. Freshly ground black pepper
15. 1/4 c. crumbled cotija 

How to cook deliciously - Black Bean And Corn Salad

1 . Stage

In a large bowl, combine beans, corn, avocado, jalapeño, tomatoes, onion, and cilantro. 

2 . Stage

In a small bowl, whisk together lime juice, oil, honey, and cumin. Season with salt and pepper. 

3 . Stage

Pour dressing over salad mixture and toss to combine. Add cotija and toss again. Season to taste with more salt and pepper.
