Ingredients for - Blueberry Peach Feta Salad
1. 1/2 c. white balsamic vinegar -
5. 1 c. extra-virgin olive oil -
6. 1/2 c. finely chopped shallots -
7. 4 medium yellow peaches, halved lengthwise, cut into 1/4" -thick slices -
8. 4 Persian cucumbers, sliced 1/4" -thick rounds -
10. 2 tbsp. thinly sliced fresh basil -
11. 3/4 c. crumbled feta (about 4.5 oz.) -
How to cook deliciously - Blueberry Peach Feta Salad
1. Stage
In a large bowl, whisk vinegar, lemon zest, mustard, and 1/2 tsp. salt. While whisking, slowly pour in oil until smooth and emulsified. Add shallots and whisk to combine.
2. Stage
Add peaches, cucumbers, blueberries, and basil and toss to combine. Top with feta.
