Ingredients for - Broccoli Slaw

1. 2 heads broccoli -
2. 2 c. shredded purple cabbage (about 1/4 head) -
3. 4 scallions, sliced -
4. 2 medium carrots, peeled, grated -
5. 1 c. loosely packed fresh parsley leaves -
6. 1/2 c. mayonnaise -
7. 6 tbsp. fresh lemon juice -
8. 1/4 c. pure maple syrup -
9. 2 tbsp. Dijon mustard -
10. 2 cloves garlic, grated -
11. 1/2 c. chopped toasted walnuts -
12. 1/2 c. dried cranberries   -
13. 2 tsp. kosher salt -

How to cook deliciously - Broccoli Slaw

1. Stage

Trim end of broccoli stalks and cut off crowns. Peel stalks, halve crosswise, and thinly slice each half lengthwise to create rectangular slices. Cut slices into matchsticks and transfer to a large bowl. Cut florets from broccoli crowns into thin 1" pieces and add to bowl. Add cabbage, scallions, carrot, and parsley and toss to combine.

2. Stage

In a small bowl or measuring cup, whisk mayonnaise, lemon juice, maple syrup, mustard, and garlic. Pour over broccoli mixture and toss until coated. Fold in walnuts and cranberries; season with salt. Chill until ready to serve.
