1. Cashews 1 cup
2. Garlic, peeled 4 cloves
3. Carrots, peeled and roughly chopped 1 pound
4. Lemon, juiced 1 large
5. Tamari 1 tablespoon
6. Flat-leaf parsley, chopped 1 bunch
7. Mayonnaise, or to taste 1 ½ tablespoons
8. Salt to taste 1 ½ tablespoons

Combine cashews and garlic in a food processor and pulse until finely chopped. Add carrots, lemon juice, tamari, parsley, and mayonnaise and process until smooth. Season with salt.
