Ingredients for - Birria

1. Dried California chile peppers, stemmed and seeded - 2
2. Dried pasilla chiles, stemmed and seeded - 2
3. Dried guajillo chiles, stemmed and seeded - 2
4. Dried ancho chiles, stemmed and seeded - 2
5. New Mexico dried red chile pods, stemmed and seeded - 2
6. Water to cover - 2
7. Garlic - 6 cloves
8. Onion, or to taste - 1 slice
9. Ground black pepper - 1 teaspoon
10. Dried oregano - 1 teaspoon
11. Ground cumin - ¼ teaspoon
12. Ground cinnamon - ¼ teaspoon
13. Onions, chopped - 2 ½
14. Boneless beef chuck roast, cut into chunks - 3 ½ pounds
15. Bay leaves - 6
16. Salt to taste - 6

How to cook deliciously - Birria

1. Stage

Place dried chiles into a saucepan and cover with water. Bring to a boil, reduce heat, and simmer until chiles are softened, 15 to 20 minutes.

2. Stage

Pour chile mixture into a blender. Add garlic, onion slice, pepper, oregano, cumin, and cinnamon. Blend until smooth.

3. Stage

Layer chopped onions in the bottom of a slow cooker. Place chuck roast over onions and add bay leaves. Pour chile sauce on top.

4. Stage

Cook on High until beef is tender enough to shred with a fork, about 5 hours.

5. Stage

Remove beef from sauce. Continue cooking sauce until reduced, 35 to 45 minutes. Return beef to sauce and season with salt.
