Ingredients for - Ceviche de Soya

1. Soy protein (TVP) - 8 ounces
2. Limes, juiced - 5
3. Plum tomatoes, seeded and chopped - 1 pound
4. Cucumbers - peeled, seeded, and cubed - 2 small
5. White onion, diced - ½
6. Cilantro leaves, finely chopped - 10 sprigs
7. Jalapeno pepper seeded, deveined, and minced - 1
8. Dried oregano - 1 teaspoon
9. Salt to taste - 1 teaspoon
10. Crisp-fried tostadas - 16
11. Avocados - peeled, pitted, and cubed - 2

How to cook deliciously - Ceviche de Soya

1. Stage

Place soy protein in a pot and cover with water. Bring to a boil and boil for 3 minutes. Drain and rinse very well with clean water. Allow to cool completely, about 30 minutes.

2. Stage

Place hydrated soy in a glass bowl and pour lime juice over it. Let stand for 30 minutes. Drain lime juice. Mix in tomatoes, cucumbers, onion, cilantro, and jalapeno. Season with oregano and salt. Serve over tostadas and garnish with avocado.
