Ingredients for - Santa Fe Rice Salad

1. Uncooked white rice - ⅔ cup
2. Water - 1 ⅓ cups
3. Black beans, drained and rinsed - ¾ cup
4. Tomato, seeded and diced - 1 large
5. Shredded Cheddar cheese - ¾ cup
6. Sliced green onions - ⅓ cup
7. Vegetable oil - ⅓ cup
8. Vinegar - ¼ cup
9. Diced jalapeno peppers - 1 tablespoon
10. White sugar - ½ teaspoon
11. Salt to taste - ½ teaspoon
12. Avocado - peeled, pitted and diced - 1

How to cook deliciously - Santa Fe Rice Salad

1. Stage

In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat and chill.

2. Stage

In a large bowl, mix together the rice, beans, tomato, cheese and green onion.

3. Stage

In a small bowl, whisk together the oil, vinegar, peppers, sugar and salt. Pour over the rice mixture and toss to coat. Cover and refrigerate salad for 30 minutes. Top with avocado just before serving.
