Ingredients for - Spicy Eggplant Stir-Fry

1. Vegetable oil - 2 tablespoons
2. Crushed red pepper flakes - 1 teaspoon
3. Eggplant, cut into 1/2-inch cubes - 1 large
4. Onion, coarsely chopped - 1 medium
5. Red bell pepper, seeded and coarsely chopped - 1 medium
6. Garlic, finely chopped - 4 cloves
7. Soy sauce - 3 tablespoons
8. White vinegar - 2 tablespoons
9. Packed brown sugar - 1 tablespoon
10. Cornstarch - 1 tablespoon
11. Coarsely chopped fresh basil leaves - 1 cup

How to cook deliciously - Spicy Eggplant Stir-Fry

1. Stage

Heat a large skillet or wok over high heat. Add oil and pepper flakes and allow to sizzle for 15 to 20 seconds. Add eggplant and toss in the oil. Cook, stirring every minute, until it just begins to char, about 5 minutes. Add onion, bell pepper, and garlic; stir-fry for 3 minutes.

2. Stage

Drizzle with soy sauce and vinegar, sprinkle with brown sugar and cornstarch, then toss to coat all of the vegetables. Cook until sauce has thickened, about 1 minute.

Remove from the heat, add basil, and toss to combine.
